Sourdough Pine Needle Crackers
Updated: Oct 6
Few things capture a hike through the Colorado Mountains as much as the smell of pine. I am always experimenting with different ways to incorporate foraged ingredients into recipes that my friends and family will love, these crackers have been a joy to create. They remind me of a sunny hike with pine trees all around.

Recipe:
-1 cup sourdough starter
-1 cup einkorn flour*
-4 tablespoons coconut oil (plus more for brushing)
-1 teaspoon salt (plus more for sprinkling)
-2 tablespoons ground or very finely chopped fresh pine needles
*or whatever flour you enjoy using
Directions:
-Heat oven to 350 degrees Fahrenheit
-Mix all ingredients together, it can be helpful to kneed on countertop to fully incorporate everything
-Split dough in half, one for each pan
-Roll dough out evenly on silicone baking mat then put on cookie sheet
-Slice dough into little squares and poke holes with a fork
-Brush oil over the top and sprinkle with flaky salt
-Bake for 10-15 mins or until crackers are a little golden
-Let cool and enjoy!
